Potatoes, Peepers, and Onions
Today I made Potatoes, Peppers, And Onions. I got this recipe from Skinny Taste. The original Recipe actually has Chicken sausage in it and is Roasted in the oven. I made a few changes. First I did not add the Sausage Simply because I didn't have it and I had just fished a workout and wanted to cook something healthy using some Paro Family Farm Mini Sweet Peppers Since We have several bags of them. Second I Fried mine on the Stove top with EVOO (extra vergin olive oil) because I dint want to wait the time ti take to bake them.Third I used 1 yellow, 1 red, and 1 Orange pepper instead of just red because I like the splash of color. Those are the only changes that I can think of Other than I made a single portion.
It was SO good and I could see myself having this more. It was very filling and I had fun making it. Below is a pic of the peppers I used and the original pic from skinny taste. If you know of any other simple recipes for sweet peppers feel free to leave a comment. Also Click here to visit Skinny Taste
